I was looking for something quick to bake but to also satisfy my chocolate craving. I came across the “Chocolate Whoopie” which immediately reminded me of a whoopie cushion!
This recipe has easy to find ingredients and does not take long to bake. It’s also not too sweet which is great for both young and older. You can sandwich them together with a buttercream filling or drizzle melted chocolate over them.
I have to admit, my whoopies did not turn out as round as I had hoped. I used an ice-cream scoop to scoop out each mound. I suggest you fill the mixture into an icing bag and pipe out circles to get a more uniform shape.
- 250g butter
- 350g sugar
- 2 eggs
- 250ml milk
- 90ml cocoa powder
- 600g flour
- 2tsp baking powder
- pinch of salt
- Preheat oven to 160 degrees Celsius
- Line 2 baking sheets
- Cream the butter and sugar
- Add the eggs and milk and beat
- Fold in the cocoa, flower, baking powder and salt
Spoon the mixture into mounds onto the baking sheet, leaving space in between for when it spreads. Flatten each mound with the back of a spoon.
Bake for 15 minutes and leave to cool on a rack.
For a buttercream filling:
Beat 200g of butter and 350g of icing sugar.
Spread, sandwich and decorate!
